Giant Red Mustard is a fast-growing green with broad, colourful leaves and a strong mustard flavour. Young leaves add colour and heat to salad mixes, while mature leaves develop a much more pronounced flavour.

Harvest baby leaves from approximately 20 days or allow plants to mature for larger cooking greens at around 50 days. Mature leaves are suitable for braising, sautés and soups, and their intensity becomes milder when cooked.
